Chicken and Mushrooms Salad Recipe
500 g button mushrooms
400 g chicken breast
3 tablespoons olive oil
For the sauce:
150 g sour cream
2 tablespoons vinegar
3 tablespoons lemon juice
1 tablespoon olive oil
1. Clean the mushrooms, wash them and pat with paper tissues, then lay them on an oiled hot grill.
2. When the mushrooms are grilled, season the chicken breasts with salt and pepper to taste, then brown it on the grill.
3. Tear the chicken into strips and cut the mushrooms into slices. In a large bowl, mix the chicken strips with the mushroom slices. Add the grated carrots and celery, a pinch of salt and a teaspoon oil, and mix well.
4. Separately, combine the sour cream with the remaining oil, vinegar, lemon juice, salt and pepper. Pour the dressing over the chicken salad and mix. Leave in the refrigerator for at least 30 minutes so that the flavors can combine.
Tip: For even more flavor, you can add 2-3 dehydrated boletus mushrooms to the salad. Place them in a bowl filled with cold water and let them hydrate for about 30 minutes. Rinse, squeeze well, finely chop and add to the salad.
