For a quick lunch or dinner, prepare this warm quinoa salad with vegetables: it’s light, packed with vitamins and minerals, and very nutritious.
Warm Quinoa and Veggie Salad Recipe
170 g quinoa
500 ml water
1 red bell pepper
1 small cauliflower
1 tablespoon vinegar
3 tablespoons olive oil
1 teaspoon thyme
1. Heat the water and when it starts to boil, add the quinoa (you can use white and red quinoa). Slowly stir, turn the heat to low, cover and let boil for about 10-12 minutes or until the quinoa has absorbed the water.
2. Meanwhile, boil the cauliflower florets for about 3-4 minutes, so that they remain a little crispy. Cut the zucchini and bell pepper into small cubes, and fry them in a tablespoon oil. Cut the tomato into cubes.
3. Prepare the vinaigrette dressing by mixing well together the vinegar, thyme, a pinch of salt and the remaining oil.
4. After the quinoa has been cooked, add the vegetables and mix. Then drizzle with the vinaigrette dressing and serve immediately.
Tip: Just like when using rice, wash the quinoa with cold water for a few times before cooking.
